Honey-Ginger Grilled Chicken Skewers
Ingredients:
3 lbs. boneless chicken
½ cup cider vinegar
1/3 cup honey
¼ cup vegetable oil
2 tbls Silver Spring Dijon Mustard
2 tbls brown sugar
4 minced garlic cloves
4 tsp. minced fresh ginger
2 tsp. powdered sugar
Directions:
Soak skewers in water for 30 minutes. Slice chicken into 2 to 3 inch strips measuring about ½ inch think and 1 inch wide (be sure to trim off all fat); place chicken in resealable plastic food storage bad. In a small bowl stir together vinegar, honey, oil, mustard, sugars, garlic and ginger. Add marinade to bag with chicken. Refrigerate chicken 1 day (or freeze). Preheat grill to medium-high. Remove chicken from marinade (marinade may be saved as a baste but must be boiled first). Thread chicken onto soaked skewers. Grill chicken skewers about 8 to 10 minutes. Serve with peanut, teriyaki or honey mustard sauce. To add a little color, add veggies (red/yellow peppers, red onion or grape tomatoes) before grilling.
