Ingredients:
Brandy-Soaked Cherries, Pecans, and Bacon

1 cup dried cherries
-
½ cup applewood bacon, chopped
-
½ cup pecans
-
Brandy (enough to cover cherries)
- 3 tablespoons brown sugar
Dijon Crusted Chicken
-
3 chicken leg quarters (or boneless thighs)

Salt (to taste)

Pepper (to taste)

1 tablespoon Silver Spring Beer'n Brat Mustard
-
1 tablespoon Silver Spring Prepared Horseradish

Flour (for dredging)
- Oil (for searing)
Orange Glaze
-
Zest of 1 orange
-
Juice of 1 orange
- ½ cup sugar
Orange Dijon Mustard Mayo
-
½ cup mayonnaise
-
2 tablespoons Silver Spring Beer'n Brat Mustard

1 teaspoon rosemary (fresh or dried, minced if fresh)
-
1 teaspoon thyme (fresh or dried, minced if fresh)
- 2 tablespoons orange glaze (from above)
For Assembly
-
4 croissant buns
-
Brushed orange glaze (from glaze above)

Final mixture of chicken, cherries, bacon, and pecans
Directions:
- Prepare Brandy-Soaked Cherries, Pecans and Bacon: Start day before, soak cherries in enough brandy to cover overnight and then drain. Next day, render bacon to nearly crisp, add in cherries cook until fragrant. Add brown sugar and cook until thickened, then stir in pecans.
- Prepare Dijon Crusted Chicken: Remove skin of chicken, dry chicken and season, then rub with mustard, horseradish and dredge in flour. Heat up oil in a deep pan and sear chicken until golden. Move pan to preheated oven at 400f until it reaches an internal temperature of 165f. De-bone when cool. Chop.
- Prepare Orange Glaze: While chicken is cooking, zest the orange and squeeze out juice, add sugar, stir and reduce until thick.
- Prepare Orange Dijon Mustard Mayo: Before assembly, mince herbs and combine all ingredients in a bowl, stir in chicken, cherries, bacon and pecans. Resembles a chicken salad texture and appearance.
- Brush orange glaze on croissant and assemble sandwich.
